Panna Cotta Tea Tart



  • 1 cup Milk
  • 1tbsp loose leaf black tea
  • Zest of 1 lemon
  • 1/2 cup Cream
  • 2 tbsp Granulated sugar
  • 1 1/4tsp Knox gelatin powder
  • 1/4 cup White chocolate melted
  • 6pre-baked tart shells



  1. Infuse the milk with flavour by heating the milk with
        – vanilla bean, split in half, scrape the seeds, and add pod and seeds to the pot
        – Havukal Black Tea
        – Fresh herbs, like mint or basil
        – Lemon zest, which will add flavour without the risk of the milk curdling
        – White Chocolate melted
  2. Sweeten the milk: with
        – granulated sugar
        – maple syrup
        – honey
        – brown sugar
  3. Melt the gelatin in the sweetened infused hot milk mixture
  4. Pour into tart shell
  5. Chill in the fridge for several hours to set the panna cotta
